Consulting

Beverage programs that work beyond the menu.

Beverage consulting for hotels, resorts, restaurants, and hospitality groups that need structure, identity, and execution.

The work

I develop bar concepts, cocktail programs, service standards, training documents, opening support, and operational systems for teams that need the beverage offer to be distinctive, profitable, and realistic to run.

Most beverage programs fail in the gap between the idea and the operation. The menu looks good, but the team cannot execute it consistently. The concept is attractive, but the service has no rhythm. The drinks are ambitious, but the prep, glassware, equipment, and training are not aligned.

My work sits in that gap. I build beverage programs from the point of view of the guest, the operator, and the bartender.

  • House-made ingredient and lab programs
  • Brand collaborations and beverage storytelling
How we work together

Three formats. Pick the one that fits.

Project

Clear scope, clear end date.

A defined deliverable. New opening, menu relaunch, single outlet redesign, training intensive. Brief, scope, milestones, sign-off.

Retainer

Ongoing creative and commercial direction.

Multi-outlet groups and properties that want a partner, not a one-off. Quarterly visits, monthly check-ins, strategic input on hires, suppliers, and brand alignment.

One-off

Audit, workshop, or single deliverable.

A precision audit on an existing program. A signature cocktail brief. A team workshop in a single weekend. When the scope is small but the standard is not.

Tell me the project.

Send the venue, location, timeline, number of outlets, and what is not working yet. I will tell you what I would do, how I would approach it, and what the engagement should look like.
